orange peel (finely grated)

Regina® Sherry Cooking Wine
Trappey's® Red Devil Cayenne Pepper Sauce
In large non-metal bowl, combine orange juice, cooking sherry, soy sauce, mustard, orange peel, hickory seasoning, cayenne pepper sauce and garlic. Add chicken to marinade, stirring to coat well. Cover; chill for 4 hours or overnight, stirring occasionally. Drain, reserving marinade. Place chicken quarters on rack in roasting pans. Bake at 375°F for 45 to 50 minutes or until internal temperature reaches 185°F. Let stand for 10 minutes. Meanwhile, place reserved marinade in saucepan. Heat to a boil; boil for 15 minutes. Keep warm. To serve, per order; place 1 chicken quarter on serving plate. Ladle 1 oz. sauce over chicken; serve immediately.
