Food Services- Smokey Barbecue Nachos

  • 1 1/2 lb. sweet Italian sausage (casing removed and crumbled)
  • 1 1/2 cups onions (chopped)
  • 1 1/2 cups chili sauce
  • 1 1/2 tsp. chili powder
  • 12 oz. tortilla chips
  • 18 oz. Monterey Jack cheese (shredded)
  • 1 1/2 cups tomatoes (chopped)
  • 3/4 cup ripe olives (sliced, pitted)
  • 1/3 cup Regina® Red Wine Vinegar
  • 1 Tbsp. Wright's® Natural Hickory Seasoning
  • 1 Tbsp. Accent® Flavor Enhancer


In large skillet, over medium-high heat, cook sausage and onions until sausage is no longer pink, stirring to break up meat. Drain excess fat. Stir in chili sauce, vinegar, hickory seasoning, Accent® and chili powder. Heat to a boil; reduce heat to low. Cover; simmer for 10 minutes. To serve, per order; arrange1 oz. tortilla chips on heat-proof plate leaving center open. Place 1/3 cup sausage mixture in center of chips; sprinkle chips with 1 1/2 oz. cheese, 1 oz. tomatoes and 1/4 oz. olives. Bake at 425°F for 2-3 minutes or until cheese is melted. Serve immediately.
