Great Northern Bean Salad with Sesame Sauce

Bean salad seasoned with red wine vinegar, lemon juice, salt and pepper.

  • 1 lb. Joan Of Arc® Great Northern Beans (drained and rinsed)
  • 4 whole fresh tomatoes (diced)
  • 2 large whole red onions (sliced fine)
  • 2 whole green bell peppers (sliced fine)
  • 2 Italian parsley bunches (washed and dried)
  • 1 1/2 tsp. salt
  • 1 tsp. black pepper (freshly ground)
  • 1/2 cup Regina® Red Wine Vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 cup Tahini Paste
  • juice of lemons
  • 4 whole hard-boiled eggs (quartered or sliced)
  • 24 whole kalmata olives


Cut parsley into sprigs. Toss drained beans, onions, tomatoes, peppers, parsley springs, salt, pepper, olive oil, and vinegar. Blend Tahini paste with lemon juice and toss into salad. Check seasoning garnish with eggs and olives.
