Jo Ann’s Unstuffed Peppers

Beef, peppers, onion, rice and tomatoes make up this delicious dish.

  • 1 1/2 lb. ground beef
  • 2 large whole green peppers (sliced lengthwise)
  • 1 whole yellow onion (sliced)
  • 28 oz. canned whole tomatoes (drained and chopped)
  • 3 Tbsp. Regina® White Wine Vinegar
  • 1 cup white rice (cooked)
  • 4 whole pita pockets


In large skillet over medium-high heat, brown ground beef; drain and return to skillet. Stir in green peppers, onion, and beef gravy. Simmer until peppers are tender, about 15 minutes. Add tomatoes; simmer 5 minutes longer. Remove from heat and add Regina® White Wine Vinegar and rice. Stir until blended. Slice pita pockets in half. Spoon ground beef mixture onto bottom half of pita, replace top and serve.
