Savory Lamb Chops with Dijon Molasses Glaze

Lamb with a spicy sweet glaze.

  • 2 tsp. olive oil
  • 2 Tbsp. shallots (finely chopped)
  • 1/4 cup Brer Rabbit® Molasses
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. Regina® Red Wine Vinegar
  • 4-6 bone-in lamb chops (1-inch thick)


In small saucepan, heat oil over medium heat and cook shallots, stirring occasionally, 2 to 3 minutes or until golden brown. Stir in molasses, mustard and vinegar. Reduce heat to low and simmer, stirring occasionally, 5 minutes. Meanwhile, season lamb chops with salt and pepper. Arrange on broiler rack and generously brush with molasses glaze. Broil, turning once and brushing with additional glaze, until desired doneness. Makes 2 servings.
