Tuscan Bread Salad

  • 2 whole fresh grape tomatoes
  • 1 whole medium sized cucumber
  • 1 whole small yellow pepper
  • 1 whole small red onion
  • 1 6 oz. can B&G® Large Pitted Ripe Olives (drained)
  • 1/4 cup Regina® Balsamic Vinegar
  • 2 Tbsp. extra virgin olive oil


If using medium tomatoes, cut into bite-sized pieces; place in large bowl. Cut cucumber lengthwise in half; remove seeds. Cut cucumber, pepper and onion into bite-sized pieces; place in bowl. Stir in olives, vinegar, oil, capers, basil, garlic and flavor enhancer. Cut or tear bread into 1-inch pieces. Add bread to vegetable mixture; toss gently to coat with dressing. Sprinkle with cheese. *Ricotta Salata is a firm, pungent cheese suitable for grating. If unavailable, feta cheese may be substituted. Note: To dry fresh bread quickly, place bread cubes on broiler pan. Broil 4 to 6 inches from source of heat for 3 to 5 minutes or until lightly browned and crisp, stirring once or twice.
